(from Food Management) Schools are using a variety of tactics to increase the appeal of healthy school meals. A recent survey of School Nutrition Association members shows that nearly three-quarters are offering taste tests and samples, two-thirds have salad bars and more than half provide nutrition education. Nearly half have scheduled recess before lunch to get kids hungry for lunch. Schools are also encouraging students not to waste food. Two-thirds have cafeteria share tables, where students can leave and take food, and 18 percent donate food to charitable organizations.
